Inji Puli

                              INJI PULI


Heya Fam!! Today we will see how to make a yummy and mouthwatering kerala side dish.

PREPARATION TIME: 10 - 15 minutes 

INGREDIENTS:
• Oil - 3 tbsp
• Mustard seeds - 2 tsp
• Fenugreek seeds - 1 tsp
• Ginger - 1/2 cup
• Garlic - 1 cup
• G.chillies - 5 nos
• Chilli powder - 1 tbsp
• Turmeric powder - 1/2 tbsp
• Asfoetida - 1/2 tsp
• Curry leaves - Few
• Tamrind juice (gooseberry size)
• Salt to taste

METHOD 
• Extract juice from tamrind. 

• Chop ginger, garlic, green chillies.

• Heat oil splutter mustard seeds, add fenugreek seeds, curry leaves.

• Add chopped ginger, garlic, green chillies and saute it.

• Add tamrind juice, chilli powder, turmeric powder, salt.

• Saute it well. Switch off the stove. Add asfoetida powder and mix it. 


Goes well with sambar rice or any curries.

Paneer Fried Rice

                      PANEER FRIED RICE


Hello Fam!! Welcome to our blog. Today we will see how to make yummy Paneer Fried Rice.

INGREDIENTS:
• Paneer - 250 gms
• Big onions - 2 nos
• Green chillies - 2 nos
• Garlic chopped - 5 nos
• Beans - 6 nos
• Carrot - 1 no
• Spring onions - 1/4 bunch
• Oil - 2 tbsp
• Tomato sauce - 5 tbsp
• Soya sauce - 3 tbsp
• Cooked Basmati rice - 2 cups
• Salt to taste

METHOD:

•  Cook Basmati rice with little salt.

•   Heat oil in a pan, saute paneer cubes till golden. And keep it aside.

•   In a wok or kadai heat little oil saute garlic chopped, then add onions and saute with that carrots, then beans, a pinch of salt. Saute for a while till its almost cooked.

•   Add spring onions, tomato sauce, soya sauce, mix it. Add cooked rice and mix it well. Add fried paneer cubes to this mix. Garnish with spring onions.

•   Tasty paneer fried rice is ready to serve. Serve hot with tomato sauce.

Bonda

             Urulai Kezhangu / Potato Bonda


Heya Fam. Welcome back to my blog. Today we will see how to make a tasty snack.

RECIPE : Snack 
SERVES : 5 - 6

INGREDIENTS 
Potatoes - 5 nos (Medium)
Big onions - 2 nos
Mustard seeds - 1 tsp
Urad dal - 1/2  tsp
Bengal gram dal - 1/2 tsp
Green chillies - 6 now
Curry leaves - few
Turmeric powder - 1/2 tsp
Oil
Bengal gram flour - 1 cup
Rice flour - 1/2 cup
Chilli powder - 2 tsp
Turmeric powder - 1/4 tsp
 Asfoetida powder - a pinch
Water
Salt to taste

METHOD

•   Wash potatoes.

•   Boil potatoes. 

•   Peel the skin when it's cool.

•   Heat oil in a pan. Add mustard seeds. Let it splutter. 

•   Add Urad dal, bengal gram dal and saute it.
Add onions, chopped green chillies and curry leaves. When onions become transparent add turmeric powder, mashed potatoes, salt and mix well. In the medium flame garnish with coriander leaves.

•   In a bowl add bengal gram flour, rice flour, chilli powder, turmeric powder, asfoetida powder, salt. Mix well. Add water little by little till medium consistency. 

•   Make small balls of potato mixture.

•   Heat oil for frying. Dip the balls one by one in the flour mixture. Put the balls in hot oil.

•   Now deep fry in the medium flame. Take out the fried balls, when it turns golden brown.

•   Now tasty Urulai Kezhangu Bonda is Ready. Serve with tomato sauce or coconut chutney.

Tip: Oil should not be too hot while frying, it may turn dark.

Fish Curry/ Mathi Meen Kuzhambu

      FISH CURRY/MATHI MEEN KUZHAMBU

PREPARATION TIME: 40 mins

INGREDIENTS:
Fish (Sardine fish) - 1kg
Coconut oil - 4 tbsp
Fenugreek seeds - 1/2 tsp
Small Onions - 1/2 cup
Garlic flakes - 1/4 cup
• Ginger - 1 inch
• Green chillies - 8 nos
• Green mango - 1 no
• Tamrind juice - 1/2 cup
Curry leaves - Few
• Coconut paste - 1/2 cup
• Salt to taste.

METHOD:

•   Clean the fish well.

•   Mix chilli powder, turmeric powder, ginger and garlic paste, salt and little water. Apply this masala on the fish.
•   Marinate for 1/2 an hour.

•   Meanwhile slice onions, garlic, ginger, slice mango, slit green chillies, grind coconut.

•   Heat oil in vessel add fenugreek seeds.

•   Then add sliced onions, garlic, ginger, curry leaves and saute.

•   To this add green chillies.

•   Add Mango. Saute for some time. Add Tamrind juice, Chilli powder, Turmeric powder, coriander powder, salt.

•   Add coconut paste.

•   Boil the curry till the Mango is half cooked. 

•   Slide the marinated fishes into the curry. Cook for 5-8  minutes.

•   Garnish with curry leaves and sprinkle 1 tsp of Coconut oil. 

•   Yummy fish curry is ready to serve. 

• Serve with hot white rice or Aappam , String hopper, Dosa, Iddlis of your choice.
